Crispy Twice Cooked Potatoes

I have been seeing these all over my discover page recently so I decided to make them. They did not disappoint! It is important to chill these in the fridge completely so they can reach their full crispy potential! —Lorenzo Tavani

What You'll Need
Ingredients
  • 2 pounds Small Potatoes
  • Oil to coat
  • Salt to taste
  • 1.5 cups High heat cooking fat
Directions
  1. Preheat oven to 350.
  2. Toss potatoes in oil and salt and bake until fork tender.
  3. Cool potatoes in the fridge completely.
  4. Smash with hand and fry in oil on both sides until crispy.
  5. Salt immediately after frying so your salt sticks!
