Ingredients
-
1
lemon, zest and juice
-
12 ounces
fettuccine
-
1/2 cup
heavy cream
-
1/2 cup
grated parmesan
-
1 cup
reserved pasta water
-
1/2 teaspoon
kosher salt
-
black pepper, to taste
-
fresh parsley, for topping
Directions
-
Bring a large pot of salted water to a boil. Cook your pasta according to package instructions. Right before it is done, save a cup of the pasta water. Then drain and set aside.
-
Add cream and lemon zest to the same pot over medium-low heat. Let it simmer for about 2-3 minutes until it thickens slightly.
-
Add in your cooked pasta to the cream sauce. Slowly add in the parmesan and most of the pasta water. Tossing constantly, you want the parmesan to melt as you add it in. Add in more pasta water to thin out the pasta sauce as needed (You might not need all of it).
-
Add in 1 tbsp of lemon juice and salt. Taste for and adjust for seasoning.
-
Serve and top with additional parmesan, parsley, and black pepper.
