**Ingredients:**
- 1 lb Italian sausage links (sweet or hot, depending on preference)
- 2 tablespoons olive oil
- 1 large onion, thinly sliced
- 2 bell peppers (red, yellow, or green), thinly sliced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1/4 cup chicken or vegetable broth
- 1 tablespoon tomato paste
- Fresh parsley, chopped (for garnish)
- Crusty Italian bread or rolls (optional, for serving)

**Instructions:**

1. **Prepare the Sausage:** If the sausage links are in casings, remove them by slicing the casing and peeling it away. Set aside.

2. **Cook the Sausage:** In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sausage links and cook until browned on all sides, about 8-10 minutes. Remove the sausage from the skillet and set aside.

3. **Cook the Vegetables:** In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onions and peppers, and cook until they begin to soften, about 5 minutes.

4. **Add Garlic and Seasonings:** Stir in the minced garlic, dried oregano, dried basil, salt, and pepper. Cook for another 2 minutes until fragrant.

5. **Deglaze the Pan:** Pour in the chicken or vegetable broth, scraping up any browned bits from the bottom of the skillet. Stir in the tomato paste until well combined.

6. **Simmer:** Return the sausage to the skillet, nestling it among the peppers and onions. Cover the skillet and let it simmer over medium-low heat for 15-20 minutes, or until the sausage is cooked through and the vegetables are tender.

7. **Serve:** Garnish with chopped fresh parsley before serving. You can serve the Italian sausage with peppers and onions as is, or on crusty Italian bread or rolls for sandwiches.
