This refreshing salad features crunchy vegetables and sweet-savory kamaboko dressed with a creamy sesame dressing. The components come together easily and can also be swapped for items in your crisper drawer. All you need is:
- A leafy element, like iceberg or romaine
- Some crunch factors, like celery and cucumber
- A sweet-savory protein, like kamaboko or imitation crabmeat
- An Asian dressing, like a creamy sesame dressing

- Creamy Sesame Dressing

mayonnaise

honey

rice vinegar

Dijon mustard

soy sauce

sesame oil

garlic powder

large head romaine, chopped

ribs celery, sliced

large Japanese cucumber, quartered lengthwise and sliced

kamaboko or imitation crab, shredded

toasted sesame seeds, for garnish (optional)
Directions

For the creamy sesame dressing: Place all the dressing ingredients in a half pint mason jar. Cover and shake to combine. Dressing should be pourable. If the dressing is too thick, add water, one teaspoon at a time, until you reach the desired consistency.

To assemble the salad: Combine the salad ingredients, except the sesame seeds, in a large bowl. Dress the salad right before serving. Sprinkle sesame seeds to garnish (optional).
