Granola Waffles with Maple-Granola Brittle & Yogurt

These waffles are slightly adapted from Marion Cunningham’s breakfast bible, The Breakfast Book. Adding granola to the batter makes the waffles more substantial, better able to soak up the butter and syrup. Marion recommends using your own homemade granola (we have a tremendous recipe here)—and I’ve gone the extra mile and added a granola brittle to sprinkle on top along with yogurt, fresh strawberries and a drizzle of maple syrup. —Anna Billingskog

Ingredients
  • 2 cups granola (without raisins or dried fruit), divided
  • 1/4 cup maple syrup, more for serving
  • 1 3/4 cups milk, more to thin batter (if needed)
  • 1/2 cup (1 stick) butter, melted
  • 2 large eggs
  • 1 1/2 cups whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Cooking oil, for waffle iron
  • 1/2 cup Greek yogurt, for topping
  • Sliced fresh berries, for topping
Directions
  1. Make the brittle. Preheat the oven to 325°F and in a small bowl, mix together 1/2 cup of granola and the maple syrup together, then, on a sheet pan lined with a nonstick mat, smash it flat and bake it for 10 minutes until it’s darker in color. Remove from the oven, let cool, and snap into pieces.
  2. Make the waffles. Stir the granola and milk together in a medium-size bowl and let stand for 10 to 15 minutes, until the granola has softened.
  3. Beat the melted butter together with the eggs, and add to the granola-milk mixture. In a separate bowl, mix the flour, baking powder, baking soda, and salt together. Add to the granola-milk-egg mixture and beat it just until the batter is blended.
  4. Heat up a waffle iron and lightly brush with oil. Pour in a scant amount of batter (1/2 to 3/4 cup), just enough to barely fill the grids. Close the iron and cook until it’s done steaming and the waffles are golden. If the batter becomes too thick, stir in more milk (about a tablespoon or two more). Plate, top with a dollop of yogurt, then sprinkle with the granola brittle and sliced fresh berries and if you like, a drizzle of maple syrup. Enjoy immediately.
