Ingredients

1 cup
almond flour

1/3 cup
ground flaxseed

1 teaspoon
baking powder

1/2 teaspoon
salt

eggs

3 tablespoons
butter (melted and cooled -- preferably organic grass fed, or sub coconut oil)

1 teaspoon
vanilla extract

1/3 cup
golden monk fruit sugar or sweetener of choice

1/2 cup
almond milk (vanilla, unsweetened)
Directions

Preheat your waffle maker to a medium setting.

In a large mixing bowl combine the almond flour, ground flaxseed, baking powder, monk fruit sweetener and salt. Whisk to combine then make a well in the center of the dry ingredients and add the two eggs, vanilla extract and almond milk, mix well.

When your waffle maker comes to temperature, spray it with coconut oil spray or grease with butter. Pour your waffle batter in and close to cook, approx. 5-7 mins.

Use tongs to carefully remove the waffles and serve. These go well either with a light sprinkling of sugar and berries for a savory sweet breakfast or with eggs and veggies as your "toast."

These waffles are even better toasted the next day which will make them even more crispy, making these an excellent meal prep breakfast.
