A mouth watering, simple salmon recipe. Start with salmon filets, then make a sundried tomato cream sauce, fresh spinach, and serve over penne pasta. —Dash of Amy

Ingredients
  • Salmon
  • 3-4 salmon filets
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Sundried Tomato Cream Sauce
  • 3 tablespoons butter
  • 1 cup onion, finely diced
  • 2 garlic cloves
  • 1/3 cup dry white wine
  • 1/3 cup oil packed sundried tomatoes (julienne cut)
  • 1 pint heavy cream
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 5 ounces baby spinach (fresh)
  • 1/2 cup Parmesan cheese
  • 1/4 cup fresh parsley, finely chopped
  • 16 ounces penne pasta, cooked
Directions
  1. Heat olive oil in a deep skillet, and add the salmon; sprinkle with salt and pepper. Cook 3-4 minutes, then flip it and cook another 3-4 minutes. Transfer to a plate.
  2. Melt the butter in the same pan, and add the onions. Sauté for about 3 minutes, then add the garlic and cook another minute.
  3. Add the wine, sundried tomatoes, heavy cream, salt and pepper; bring to a boil.
  4. Turn heat down to maintain a light boil, and add the spinach stirring constantly while it cooks down. Cook about 4-5 minutes.
  5. Add the parmesan cheese, mix well, and add salmon back to the pan. Continue to flip the fish so it gets coated in the sauce.
  6. Serve the salmon individually over cooked penne pasta and sprinkle with fresh parsley.
