What You'll Need
Ingredients
  • 2 pounds tomatoes (mix it up - try yellow, green, dark red...)
  • 1 teaspoon flaky salt
  • 2 teaspoons dried thyme
  • 2 tablespoons capers
  • 1/4 cup olive oil (graza drizzling oil is great for this recipe)
  • 1 lemon
Directions
  1. Cut your tomatoes into desired shapes and sizes, and transfer them to the serving platter as you cut.
  2. Season the tomatoes with flaky salt, thyme, and lemon juice. Allow it to marinate in the refrigerator for an hour.
  3. Rinse and drain the capers, then brown them in a skillet with oil. Optional: if you want extra crispy, throw them in the air fryer for 10 minutes at 400F.
  4. Retrieve the tomatoes from the refrigerator. Once the capers have cooled, add them to the tomatoes. Drizzle as much olive oil as desired and sprinkle with flaky salt.
  5. Add a twist: If you want to impress, add some burrata or crumbled feta on top. Shake things with: some crispy, crumbled focaccia or crispy garlic.
