Ingredients
  • 2 cups watermelon, cubbed
  • 1 piece English cucumber, cubbed
  • 3 tablespoons basil, chopped
  • 2 tablespoons fresh mint, chopped
  • 2 cups arugula
  • 3/4 cup feta cheese, crumbled
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons balsamic glaze
  • 1-2 teaspoons sea salt
  • 1/2 teaspoon pepper, freshly ground
Directions
  1. In a bowl add the watermelon, cucumber, basil and mint. Stir carefully so the watermelon pieces don’t break.
  2. Add the feta cheese crumbles, stir, drizzle the EVOO and balsamic glaze and stir. Right before serving season with salt and pepper, stir and serve it on top of a layer of arugula leaves.
