Ingredients

One large red capsicum deseeded and shredded

One large brown onion shredded

Three garlic cloves peeled and minced

One tsp of salt

A pinch of black crushed pepper

One tsp of paprika

Two tbsps of cold pressed extra virgin olive oil

A pinch of chopped parsley for garnish
Directions

Heat a medium sized pan at medium heat with oil and throw in the onions once the oil is heated and cook for 2 minutes or until the onions become brown. Next throw in all the ingredients in the pan and cook for 8 minutes or until everything is well cooked.

Once all the ingredients are well cooked turn off the stove and let everything cool. Next with a food processor pour in the cooked vegetables and process them for 30 seconds to a minute or until the consistency becomes slightly pasty and chunky.

Pour the dip into a nice lovely bowl with parsley on top and enjoy!
