Make the Rotis: If using Rotimatic, set the desired thickness and warmth. Let the fresh, hot rotis cool slightly before assembling the wraps.

Prepare the Filling: In a bowl, combine roasted vegetables, hummus, Greek yogurt, lemon juice, cumin powder, garlic powder, salt, and pepper. Mix well to combine flavors.

Assemble the Wraps: Lay a roti flat on a clean surface. Spread a generous amount of the vegetable mixture evenly over the roti.

Add Freshness: Top with thinly sliced cucumber, tomato, and red onion for added crunch and flavor.
