What You'll Need
Ingredients
  • 1 1/2 cups Whole Wheat flour for rotis
  • 1 cup mixed roasted vegetables (bell peppers, zucchini, eggplant)
  • 1/2 cup hummus
  • 1/4 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish
Directions
  1. Make the Rotis: If using Rotimatic, set the desired thickness and warmth. Let the fresh, hot rotis cool slightly before assembling the wraps.
  2. Prepare the Filling: In a bowl, combine roasted vegetables, hummus, Greek yogurt, lemon juice, cumin powder, garlic powder, salt, and pepper. Mix well to combine flavors.
  3. Assemble the Wraps: Lay a roti flat on a clean surface. Spread a generous amount of the vegetable mixture evenly over the roti.
  4. Add Freshness: Top with thinly sliced cucumber, tomato, and red onion for added crunch and flavor.
  5. Fold and Serve: Fold the bottom and sides of the roti inwards, then roll tightly to enclose the filling. Garnish with fresh cilantro. Serve immediately while the roti is warm and crispy.
