Author Notes
Fancy chips, Italian nachos, Parmesan and crispy prosciutto potato chip tower—call it what you will, but know this: it’s the perfect holiday appetizer, especially for New Year’s Eve. I layer salt and pepper chips with crispy prosciutto, a Parmesan cream, more Parm, and lemon zest. It's simple to make but loaded with flavor and texture. A quick tip: assemble this just before serving to keep the chips perfectly crisp. Be sure to layer generously so every bite delivers a little bit of everything. —Nea Arentzen
Ingredients
-
1/4 cup
creme fraiche
-
1/4 cup
freshly grated Parmesan cheese, plus more for garnish
-
a
pinch of kosher salt
-
freshly ground black pepper
-
4 ounces
(1/2 package) Prosciutto
-
2 (5 ounce)
bags of salt and pepper chips
-
1
large lemon, zested
Directions
-
In a small bowl, mix together the crème fraîche and ¼ cup grated Parmesan; season to taste with salt and pepper.
-
In a large skillet over medium-high heat, cook the whole prosciutto slices in batches until browned and crispy, about 2 minutes per side. Transfer to a paper towel-lined plate; break into bite sized pieces.
-
On a serving platter or plate, layer ¼ of the potato chips with prosciutto, Parmesan cream, and freshly grated Parmesan. Continue layering chips, prosciutto, cream, and Parmesan until you run out of chips, prosciutto, and cream. Garnish with a generous amount of freshly grated Parmesan, freshly grated lemon zest, and freshly grated black pepper.
