Author Notes

This creamy shrimp pasta is a flavorful and indulgent dish with a rich sauce that pairs perfectly with the shrimp and mushrooms. Here’s how you can make it:

1. Make the Creamy Sauce:
Start by melting butter in a pan, then add tomato paste and let it cook for a minute. Add cream cheese and let it melt completely. Afterward, add milk to the pan and stir to combine, creating a smooth and creamy sauce. If needed, use a blender to ensure the sauce is perfectly smooth and homogeneous.

2. Cook the Pasta:
In a separate pot, cook your pasta according to package instructions. Once cooked, drain the pasta and set it aside.

3. Prepare the Shrimp:
Marinate the shrimp in lemon juice, salt, and thyme. Then, fry them in butter until they are cooked through and tender. The result should be soft, perfectly cooked shrimp.

4. Prepare the Mushrooms:
Cook the mushrooms separately in butter with garlic. Add a bit of flour to thicken them slightly and create a nice texture.

5. Combine Everything gently
Once everything is ready, combine the pasta with the creamy sauce and stir gently to coat. Add some freshly grated Parmesan cheese to the pasta, mixing it in and sprinkling a bit on top for garnish.
