Grandma's Vanilla Pudding

Author Notes: My grandmother made this pudding for my Mom and my Mom made it for my brothers and I. It's a very versatile pudding. Slice ripe bananas into a graham cracker crust and pour cooled pudding over the top and you have the best banana cream pie! Add 3-6 Tablespoons of cocoa powder to the sugar and you have chocolate pudding for pudding in a cloud or chocolate pie! I use it to fill eclair shells and when my husband took these to class on Fridays he always got an A in the course. michelle_kuhlman

Serves: 4 or fills 1 pie


  • 1 cup Sugar
  • 1/3 cup Flour
  • 1/4 teaspoon Salt
  • 2 cups Milk
  • 3 Egg yolks, beaten
  • 2-4 tablespoons Butter
  • 1 teaspoon Vanilla extract

  1. In a heavy sauce pan mix sugar, flour, and salt. Whisk till combined.
  2. Whisk in milk. Cook over medium heat, stirring till mixture boils and begins to thicken. Cook 3 more minutes.
  3. Temper eggs with 1/2 cup mixture and slowly add eggs to the pudding. Stir for a 1-2 minutes. Add butter and vanilla.
  4. Serve warm or cold.

Perfect . Doesn’t make enough to fill a pie shell but great flavor and consistency.

My grandson shouldn’t have too much cows milk, wheat or white sugar. So I substituted two bananas mashed for the sugar, almond milk for the milk, and gluten free flour for the regular flour. It tasted delicious but I found I needed to use a bit more of the gluten free flour and added some cooked rice. Oh my! Like banana pudding and he would have liked to eat all I made. 😊

This recipe was wonderful! The texture was excellent, flavor was delicious and seemed just right. It was a little sweet for my taste so I will just half the a sugar next time, but I will be using this from now on.

I completely disagree. It is RICH as all get out (we ate it plain, cold) and maybe more sweet than I would make it the next time... but it's lush, velvety - and I can see how it would be *perfect* in a pie crust as part of a cream pie base.
