Awesome Carrot Cake

This is my mom's recipe and it is simple, foolproof, and amaaaazing. —GillianW

  • Serves 10
Ingredients
  • 2 cups cake flour, sifted
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 cup Wesson oil
  • 4 eggs
  • 3 cups carrots, shredded
  • 1 teaspoon vanilla

Directions
  1. Combine flour, sugar, soda, seasonings and oil. Beat in eggs, one at a time, carrots and vanilla. Pour into two greased 9" cake pans. Bake in 325 degree oven for 60-65 minutes. When cool, frost with icing prepared as follows.
