Ingredients

2 cups
cake flour, sifted

2 cups
sugar

2 teaspoons
baking soda

2 teaspoons
cinnamon

1 teaspoon
salt

1 cup
Wesson oil

4
eggs

3 cups
carrots, shredded

1 teaspoon
vanilla
Directions

Combine flour, sugar, soda, seasonings and oil. Beat in eggs, one at a time, carrots and vanilla. Pour into two greased 9" cake pans. Bake in 325 degree oven for 60-65 minutes. When cool, frost with icing prepared as follows.
