Charleston-based Smithey Ironware has been making super-smooth cast iron skillets since 2015, but the vintage techniques they use go back a whole lot further. They pour, package, and polish their cookware the good old-fashioned way here in the States, starting with recycled American iron—lots of it from former railroad tracks. As for their carbon-steel pans: Those are all hand-forged by a blacksmith, so no two are exactly alike. They top each piece off with a shiny, pre-seasoned finish, so you can get cooking straight away, then build the dark, seasoned patina of your dreams.
