And you’ll be able to taste why: The recipe was perfected for nearly a decade by pastry chef Roy Shvartzapel, who studied under Iginio Massari, widely considered to be the master of panettone. It starts out as flour, water, and wild yeast and is then transformed into a showstopping version of what Roy calls “the Mt. Everest of the baking world.” It’s feather-light, delicate, and just the thing you’ll want to break out at parties or surprise a host with. Will it be chocolate or candied orange and raisin?
