20 Times Roasted Squash Gets You Halfway to Dinner

November 22, 2016

Are you making something with roasted or puréed squash in the next, say, three days? Thought so! Squash doesn't roast all that quickly, but once you have a heap of it in the fridge, your dinners, lunches, and, okay, some desserts just got a lot quicker to pull off.

So roast off an extra squash or two next time you're at it, and then use it in any of the next 20 recipes (if the recipe calls for squash purée, just give your roasted pieces a little mash). With winter squash of any stripe (except spaghetti) roasted in the fridge, your meals are right around the corner.

Tell us: What's your favorite squash dish to make this time of year?
