Sliced or chopped, lightly coated with olive oil and cooked on low until soft, about an hour, leaves it sweet and nutty, delicious all by itself.

What is not sexy about peasant food? It's my favorite kind!
White cabbage is delicious as a "green" vegetable side dish when chopped and lightly sauteed in butter with a little salt and pepper. Also delicious with apples and onions and/or sausage. Roasted or sauteed on the stovetop. Also delicious cut into wedges, draped in bacon, and roasted until the bacon is crispy. Also delicious browned (with or without onions) a la Eastern European cuisine and served with egg noodles. Similarly, I've made mujaddarah (onions cooked to dark brown in olive oil and mixed with lentils and wheat bulgur) before and added shredded cabbage - yum!

Just brown chopped or shredded cabbage with the onions - it ads heft and vitamins and tastes wonderful!
