Savory Vanilla Bean

I just bought 5 gorgeous soft vanilla beans and certainly some will wind up in some sort of custard, but I am wondering about savory applications - and I need to hear about it from you folks who I know and trust. Thoughts? Suggestions?

I've had a prawn dish with vanilla sauce. Quite good.

I've had scallops with vanilla sauce in a restaurant before - very good.
