A question about a recipe: Salvadoran Breakfast Cake (a.k.a. Quesadillas)

I have a question about the recipe "Salvadoran Breakfast Cake (a.k.a. Quesadillas)" from Sasha (Global Table Adventure). Has anyone tried this recipe with Greek yogurt instead of sour cream? I'm not too worried about fat, but we always have 5 quarts of Greek yogurt in the house so it would be more convenient :)

I haven't made these, but I've successfully substituted Greek yogurt for sour cream in many recipes. There's plenty of fat from the butter, eggs and cheese. I say go for it.

I'd agree, though I'd think a 0% greek yogurt might give you different, though not necessarily problematic, results.

yes, I've made this with yogurt, not Greek though, just regular plain yogurt.
