Can you freeze ricotta? I always end up buying more than I need and it would be nice to have that extra around! Thanks!!

yes. i do it often. if it ends up having more fluid than you want, strain/drain it in a sieve or add more bread crumbs/dry ingredients to your recipe- if appropriate.
