Is American Cheese the same as processed cheese, as in Kraft slices, and what can be used in its place?

Just be aware that other cheeses are not going to give you the same quest dip that this recipe is trying to replicate. Tex Mex queso is built on processed cheese.

Stephanie - good point. Are there other foods besides the processed cheese that you could recommend that would give the desired texture?

Yes, often Kraft cheese slices are described as American cheese in recipes.
You could use the Kraft slices or use a regular cheddar to your liking (if unsure, start with a medium strong one).
Or use Gruyere as in the French onion variation.
Last, if you can get Mexican cheeses where you are, see this article and its descriptions of them. Choose one to taste, and for melting ability.

Thank you Nancy. Will definately check out the article you sent. We have wonderful cheese here of every variety, just not a fan of anything processed.
