I have a question about step 1 on the recipe "Sweet Potatoes Anna with Prunes" from mrsp. It says:
"Melt 1/2 pound butter and clarify."

Essentially you melt the butter on low heat and skim off the foam & milk solids until all that remains is clear butterfat.
