A question about a recipe: Burnt Okra with Sauteed Potatoes and Basil

Russets fry better than boiling potatoes. Yukon Golds are also wonderful potatoes to fry and still not the same as Russets. Of course you can use boiling potatoes, the waxy skinned like the red potatoes, but you won't get the same crispness you can expect with a Russet.
