Sardines, Hummus, Toast

Inspired by Tartine Bread's much more elegant version —Nicholas Day

What You'll Need
Ingredients
  • a small bowl of hummus (left to your discretion)
  • 2 cans of sardines, 4 oz
  • 1 loaf of country bread
Directions
  1. Toast slices of bread. Rub with garlic, if desired. If you have cilantro or parsley, chop coarsely and mix with the hummus.
  2. Spread hummus thickly on toast. Pile sardines on top. Sprinkle with smoked paprika, if you have it.

My store has sardines in oil, and sardines in water. Which is preferable? When recipes call for sardines, are they assuming a specific kind, or is is personal preference? I'm new to sardines!
