Author Notes: I adapted this recipe from a diet and nutrition magazine. Easy to make. Serves as a tasty snack, a great topping for grilled chicken or steak, or a terrific side dish.adamnsvetcooking

Serves 2 cups

  • 1 Avocado (ripe, Hass)
  • 1/4 cup Poblano pepper (diced), if the pepper is too hot you can add less

  • 1/4 cup Red onion (diced)
  • 1 Lime (juiced)
  • Salt and pepper to taste
  1. Dice avocado. In a bowl mix avocado, poblano pepper, cilantro, figs, red onion, lime juice, salt and pepper.
  2. Serve.

These were just amazing! We had them with lunch. I hope you can consider these a condiment and can enter this under that category. I am going to upload a few photos for you. Please feel free to delete them if you do want to have them here, but I wanted to show you how they came out. I added some lime leaf basil, mint, and some spikey native coriander since I have so many herbs right now from my tiny garden.

This looks truly wonderful, as does your grilled corn salad...which is what I started making last night, but with a three sisters spin! Hope to upload that by tomorrow...have a ton of photosof the whole grilling process.
