Great recipe. I've been using a similar procedure for several years and have a paella pan that exactly fits my standard Weber. I find that if you do it right, a completely full pan (3cups of rice) uses up one load of charcoal and, as the fire cools, everything continues to cook. Your beautiful photo shows clams on top but I push clams and mussels down into the rice-never disturbing the bottom crust. Bring the pan to the outdoor table--serves 8 hungry people.

Brilliant head note. I am still laughing. Brilliant recipe to. I agree with the grill although I did mine in the oven on a stone. I have been thinking about building a wood fired oven which I am thinking might work brilliantly. I was sitting last night watching old concert footage of the Ramones on youtube.
