Happy Canada Day! There's lots happening today, July 1, 2017, across our wonderful country celebrating our 150th birthday! Further to maple syrup, I like using it in this delicious recipe by Canadian Podolski sisters (Janet and Greta) which is in their Looneyspoons cookbook - "Marla's Maple Pork Tenderloin". Once the pork tenderloin is cooked, I rest it covered, strain the sauce and bring to a boil for a couple minutes, then serve over the pork tenderloin slices and mashed potatoes, of course! Add your favourite vegs/salad. It's delicious! Here's their recipe:
RECIPE
Marla's Maple Pork
Roasted pork tenderloin drizzled with a flavourful maple and orange sauce
1 lb (750 g) pork tenderloin
1/2 cup (125 mL) pure maple syrup
2 tbsp (25 mL) each reduced-sodium soy sauce and ketchup
1 tbsp (15 mL) Dijon mustard
2 tsp (10 mL) grated orange zest
1 tsp (7 mL) each curry powder and ground coriander
2 tsp (10 mL) minced garlic
1 tsp (5 mL) Worcestershire sauce
Trim pork of all visible fat. Place pork in a large, heavy-duty, resealable plastic bag. Whisk together all remaining ingredients in a medium bowl. Pour over pork in bag. Seal bag and allow pork to marinate in refrigerator for 1 hour.
Transfer pork and marinade to a small roasting pan or baking dish. Roast, uncovered, at 350°F (180°C) for 40 minutes. Pork should be slightly pink in middle.
Let pork stand for 5 minutes before slicing. Slice thinly. Drizzle extra sauce over pork and serve immediately.
Makes 6 servings.
Per serving: 226 calories, 4.5 g total fat (1.4 g saturated fat), 25 g protein, 21 g carbohydrate, 0.5 g fibre, 74 mg cholesterol, 310 mg sodium.
