Today's Not Sad Desk Lunch: Tomato and Green Bean Salad

Amanda and Merrill toss together fat slices of fresh tomatoes, a big handful of steamed green beans (you could even zap them in your office microwave), and a quick dressing of sherry vinegar, olive oil, and salt and pepper for a colorful and brightly flavored salad. Just add a scoop of fresh ricotta and a hunk of bread. Talk about a Not Sad Desk Lunch.
