My personal favorite is carrot puree with a pinch of mild curry powder, so tasty and comforting!

I made porkkanalaatiko, Finnish carrot casserole, a few months back and it was really tasty. Carrots are combined with rice, milk, and eggs to make a sweet, cream dish. It's really easy to make too!
