I’m not sure if it’s my love for puns or dairy, but I’ve been called cheesy more times than I can count. And now that bathing suit season is behind us, I’m ready for the non-stop comfort of creamy chèvre and sharp cheddar. But even though I utterly enjoy a cheese plate or queso dip, I can’t recommend eating a whole block for dinner in good conscience. A cheese that stands alone just isn’t enough for dropping temperatures and brisk autumn breezes.
But that doesn't mean you can't have a dinner with a strong cheese foundation. By stuffing, shredding, or stirring it into pastas, breads, and vegetables, you'll get a warm, fuzzy feeling. From lasagna to sandwiches to gratins, here are 16 cheesy dinners you can enjoy all autumn long. Isn't it grate to have it all?
