I too didn’t realize ‘beets with horseradish’ had a name! It was an Easter/Christmas staple ! I’d have it all the time if I could! Great article and interesting recipe! Will be trying it!

POLISH MIDWESTERNERS REPRESENT! I never realized the fluorescent pink horseradish relish that I've been seeing on family tables my whole life had a name. I also had a great aunt whose yogurt dip recipe was and is so prized in the family that it was mentioned in her eulogy. I feel very seen and will have to try this, thank you!

Your article made me smile. I've made beet horseradish every Easter for as long as I can remember, once I left my family home in Chicago moving to NYC. It's my way to continue the Polish tradition of our Easter "break fast." We start with it at a brunch including kielbasa and hard boiled eggs, then then continue as a condiment at dinner with ham. I can't imagine an Easter without it! Now I want to try your dip! Thanks for the memory and new recipe!

I remember the neon green relish on the Chicago kosher red hots and the scrumptious Polish hot dogs. I also recall the hard-working Polish cleaning ladies working into the night in the Chicago skyscrapers in the 1970's. They were surprisingly energetic given their obvious age. Admirable!
