I recently bought the Pampered Chef Rapid Prep mandolin, which uses a plunger to push the blade into the food. I think it is impossible to touch the blade during food slicing, if using the plunger and food chute as directed. When my kids are supervised carefully, I feel confident with them using it.

Glad to hear this. I bought a cheap imitation of this (saw it on Facebook) because it seemed like it would be safe but it broke the first time I used it. I’ll look into the Pampered Chef version. Thanks.

I'm on my second Borner mandoline... been using them for more than 20 years.
Regarding safety.... yes. Easy to cut a finger. But, trust me: you'll only cut yourself once and then you're good for decades of accident-free focused use.
My mandoline is indispensable to me.

I love my Oxo Mandoline and use it several times a week for perfectly sliced cucumber salad, julienned carrots or to make Dorie G’s summer vegetable tian with eggplant Tomato and zucchini. I ALWAYS USE the hand guard and wear a cut resistant gloves. Mercer culinary sells cut resistant gloves.

MANDOLINES ARE VERY DANGEROUS FOR PEOPLE WITHOUT KNIFE SKILLS OR EXTENSIVE KITCHEN EXPERIENCE! You should not be promoting them for general use. Even with a guard, I managed to slice off the side of my thumb (on the OXO one above!). I have never seen anything bleed that much and the pain was unbearable. The emergency room doctor said that over 50% of the hand injuries they see are from mandolines. Even years later, the only way I would ever use a mandoline is at a distance, for example: piercing the potato with a fork and only holding on to the fork to slide the potato back and forth. Most of the hand guards do not work that well.

And, there is always the temptation when using a guard, to get the last few slices instead off throwing away the rest of the vegetable. This is a fatal mistake!! Don’t ever do it!

I sliced off the end of my thumb with the OXO as well. My kitchen looked like a mob hit. After an hour trying to stop the bleeding at home, I ended up in the ER. The doctor who attended showed me the scarred end of her thumb, which she sliced with a mandolin. Mandolins are ABSOLUTELY NOT the tool for everyone!

Mandolines can be very useful; they're also the most dangerous tool in most kitchens that have them; they shouldn't be thought of as not requiring skill to operate.

Mandolines are one of the easiest tools to use if you don't have knife skills. My great grandma taught me how to use one when I was around 4 or 5! Never cut myself, no blade guard either. All one needs to do is pay attention and keep your fingers out of the blade. Or at least that's what my great grandma said.

They're also THE easiest- and most common- tool to cause a serious injury with. All one needs to do to prevent any injury is pay enough attention, but a mechanical, repetitive process such as slicing with a mandoline is awfully likely to lead to lapses of concentration.
