Not a fan of amaretti dressings. But the general idea makes sense. I make my own salad dressing. I make it in the bottom of my big salad bowl. drain it Ito a smaller bowl. The dredges left in the salad bowl are used to coat veggies for roasting. I will smear some on whatever meat I am using as well. Then make my salad while the meal is cooking, toss it is the dressing the has now melded for a while. And I have that flavor profile running through the meal. Works great.
