Vegetarian Cooking for Everyone by Deborah Madison isn't specifically vegan but it has plenty on vegan recipes. It is encyclopedic and very useful. There is a section on each type of vegetable too.
Anything by Nava Atlas -- a long-time hero of mine. She also has an extensive website, www.vegkitchen.com.
Another prolific source is Isa Chandra Moscowitz, starting with Vegan with a Vengeance.
