I see some cookie recipes call to melt chocolate in a double boiler, but wouldn't it be easier to melt it in a microwave. What's the difference?

You might burn the chocolate when doing it in the microwave because it isn't as easy to check on the progress. Double boiler is a more gentle and controlled method but for convenience you can certainly use the microwave instead. Just make sure you melt it for short intervals at a time and keep checking on and stirring it!
