I don't know where you get $55 a quart--I see$12.50 for 2 pounds (about a quart) at their website http://www.hudsonvalleyfoiegras.com/foiegrasmarket.html. If you do order from them, where they get you is in the shipping costs. It's in your interest to order a lot, as the rate remains constant for a big range.
