In mixing bowl beat the eggs, olive oil and salt with fork, Add 1 cup of flour and mix with fork, add another half cup of flour mix with fork, the dough will look very shaggy add more flour if dough is too moist adding the flour a little at a time. Dump out onto floured work surface and work the dough until it forms a ball adding more flour if you need to. Knead the dough for 8-10 minutes or until soft and elastic, cover with plastic wrap and a tea towel and let rest for 30-60 minutes.
This is just for the dough, its my recipe there are thousands of recipes available and methods vary, usually they say to dump the flour onto a work surface make a well in the middle and add the eggs, beat the eggs mixing some flour in with the eggs as you beat. My Mother never did that she used the method above and her pasta was perfect.
