I served it with spaetzle (sp?!) with a little butter and herbs, and this cabbage -- http://food52.com/recipes/7533_suspiciously_delicious_cabbage -- which is insanely good, and really quite hardy. I thought the short ribs were easy to make, and I bought pre-made spaetzle (there was an incident when I tried to make homemade involving our collander, a steam burn, some panicking, and my husband finishing the process -- if you're more coordinated than I, maybe try the home-made, but the dried kind was just fine for us!), and the cabbage was easy, too. I also made applesauce. You might want to add some roasted carrots or cauliflower or something to round out the meal for you. How fun!
One of my favorite vegetarians makes some of the best meatballs ever! meatballs and spaghetti is super comfort food and easy to do! And you can still enjoy the spaghetti and sauce with a nice side salad!
