Depends where you want to go with it. Indian food has many tasty vegetarian staples, most involving legumes. There's also the easy button meatless pasta option. Stir fries tend to take well to vegetarian proteins too, and there's always the meal-sized-salad-with-nuts-and/or-eggs option.
