Calabacitas. Roasted or stir-fried squash (zucchini, yellow squash, etc), onions, and peppers (hot or not). You can even add frozen corn. Or just corn sauteed with cumin, coriander, and chile powder, with lime juice drizzled at the end. Sauteed greens would also be great, like chard or spinach with olive oil (or lard!) and lemon. Or any regular salad, especially with avocado. Or just avocado, sliced, with lime. Or jicama, sliced with lime and maybe some chile powder.
