I was wondering if pork spareribs could be substituted for short ribs in Minimally Invasive's "Short Rib Ragu"?

I think if you have "country ribs" (these are much thicker and meatier than regular spare ribs) they would work fine.

No. But 1-2 inch beef shank pieces substitute well. If you wanted to make it pork then cut pork shoulder into 2 inch cubes.
