I want to make the Short Rib Ragu recipe (http://www.food52.com/recipes...) for guests that don't eat pork. What would you substitute in for pancetta in this recipe? Thanks!

I would leave it out as it's only 2 ounces to 2.5 pounds of short rib. To add a little depth to the resulting dish, though, I might use a little bit of porcini powder (buzzed dried porcini mushrooms) or reconstitued and diced dried porcinis. A little bit would go a long way.
Good suggestions. I also think of roasted garlic puree, smoked paprika, Worchestershire sauce or soy sauce as additions, too.
