Recipe ideas for palate-cleansing sorbet to serve between courses?

My favorite in pink grapefruit-tarragon sorbet. I serve it in votive candle holders that look like ice cubes. If you freeze them first, they get all frosty when served.

I have had great success with olive oil & lemon sorbet. It has a nice mouthfeel, thanks to the olive oil and the lemon is a classic for a reason. Just sure that your olive is good. I would not use anything that rhymes with "Disco." As mentioned above cucumber sounds interesting, my tweak would be the addition of mint, preferably spearmint.
