What's the best substitute for sugar

Please give more detail -- what use do you want a replacement for? You get a sweet taste from stevia and erythritol, but they lack the bulk and liquification of sugar. Honey is not sugar, has liquid bulk, but the sweetness is not an equal substitution by volume or weight. If you are baking, there are chemistry issues. So, not a simple question.
