a quick dip in aciduated water (water with a little squeeze of lemon) will help with the oxidation.
I often salt weep my eggplant and it doesn't seem to oxidize as much. sprinkle slices of eggplant with salt and let stand on a wire wrack for 20 minutes. then lightly squeeze out the water and rinse off excess salt.
