I have way too much celery seed in my pantry. What should I make with it?

If you do much pickling, you could mix up some homemade pickling spice--black peppercorns, crushed bay leaves, coriander, mustard seeds, crushed cinnamon stick, juniper berries, allspice berries, cloves, dill seed, and celery seed.

I think it would be good in any sort of pickled or preserved peppers or veggies. Here's one that doesn't taste very vinegary - it makes a great sandwich topper. You can substitute the seed for the leaves. http://globaltableadventure.com/2012/04/20/recipe-moldovan-preserved-peppers/

Simmer it with sugar and water (to make a simple sugar) simmered with celery seed about an hour; strain it and Store in one of those squeeze bottles, the plastic ones like old fashion mustard resturant bottles---Wal-mart has those for a buck. The white plastic ones are better so you confuse it with mustard or ketchup. (g).

Great if you have a "Soda stream", and serve as a drink with a corn beef sandwich, or just hot dogs with sauerkraut.

Hummm, I wonder how that would taste with Pimms Cup, soda water, and cucumber slice for a summer cocktail.

Ooh, I like the idea of making a celery salt as la domestique suggested! How old is this stuff? Like all dried spices/herbs, they loose their pungency after a year or so. If old, you could try planting them and see what happens;0 Otherwise, toss. If fresh, the salt is a great idea. Or how about some fennel-celery seed corn muffins? Fresh fennel chopped, celery seeds to your liking, and your favorite semi-sweet cornbread recipe - even Jiffy would be good!

Maybe grind it up with salt and other spices and use it as a rub for roast pork or another roast meat.

How much is too much? Pounds? It's hard to find a use that calls for more than a few teaspoons -- cole slaw, potato salad.... Anything that uses celery would be comfortable with the seed. You could try making sprouts...
Whole seeds will keep their flavor far longer than dried leafy herbs. Try giving some away (fancy bottles for Christmas?), donate to your local food pantry or kitchen, have a kitchen yard sale? And just put the rest in closed glass bottles in a cool cupboard area, and use it when the inspiration hits.
