why does my cake fall when it comes out of the oven? Ot happens with a "from scratch" cake & a mix cake.

The first two reasons that come to mind are expired baking powder/baking soda and an unevenly hot oven. For the first problem, just buy new leaveners (and make sure they're evenly distributed in your cake by sifting together the dry ingredients and stirring the batter well). For the second, you can have your oven calibrated, or rotate the cake at even intervals while it's baking. Good luck!
